  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter softened
  • 1/2 cup brown sugar packed
  • 1/4 cup maple syrup preferably dark
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup buttermilk
  • 1/2 cup chopped pecans for the cake batter
  • For the Bourbon Maple Glaze:
  • 1/4 cup maple syrup
  • 2 tbsp unsalted butter
  • 2 tbsp bourbon
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1/2 cup chopped toasted pecans for garnish

Instructions
 

  • Preheat the Oven
  • Preheat your oven to 350°F (175°C).
  • Prepare the Skillet
  • Lightly grease a 10-inch cast-iron skillet with butter or non-stick cooking spray.
  • Make the Cake Batter
  • In a medium bowl, whisk together the flour, baking powder, and salt.
  • In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
  • Add the maple syrup, eggs, and vanilla extract to the butter mixture, mixing until smooth.
  • Gradually add the dry ingredients to the wet mixture, alternating with buttermilk, mixing until just combined.
  • Gently fold in the chopped pecans.
  • Bake the Cake
  • Pour the batter into the prepared skillet and spread it out evenly.
  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Prepare the Glaze
  • While the cake is baking, make the glaze. In a small saucepan over medium heat, combine the maple syrup, butter, and bourbon.
  • Stir occasionally until the butter is melted and the mixture is well combined.
  • Remove from heat and whisk in the powdered sugar and vanilla extract until smooth.
  • Finish the Cake
  • Once the cake is done baking, remove it from the oven and allow it to cool slightly.
  • Pour the bourbon maple glaze over the warm cake, allowing it to soak in.
  • Sprinkle toasted pecans on top for an extra crunchy finish.
