Ingredients
  

  • For the crust:
  • 1 ½ cups graham cracker crumbs
  • ¼ cup sugar
  • ½ cup melted butter
  • For the cheesecake layer:
  • 16 oz cream cheese softened
  • ½ cup sour cream
  • 1 cup granulated sugar
  • 3 large eggs room temperature
  • 1 tsp vanilla extract
  • For the cinnamon swirl:
  • 1 tbsp cinnamon
  • 3 tbsp sugar

Instructions
 

  • Prepare the Crust
  • Preheat your oven to 325°F (163°C).
  • In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until the mixture is well combined.
  • Press the crumb mixture into the bottom of a greased 9x9-inch baking pan. Bake for 8-10 minutes, then remove from the oven and let cool while you prepare the cheesecake filling.
  • Make the Cheesecake Filling
  • In a large mixing bowl, beat the softened cream cheese until smooth.
  • Add in the sour cream, sugar, eggs, and vanilla extract. Beat until smooth and creamy, but avoid overmixing to prevent cracks during baking.
  • Pour the cheesecake filling over the cooled crust and smooth out evenly.
  • Create the Cinnamon Swirl
  • In a small bowl, mix the cinnamon and sugar together.
  • Drizzle the cinnamon mixture over the cheesecake filling. Using a knife or skewer, swirl the cinnamon mixture into the cheesecake to create the beautiful marbled effect.
  • Bake
  • Bake the cheesecake bars in the preheated oven for 40-45 minutes, or until the center is set and only slightly jiggles.
  • Let the bars cool completely, then refrigerate for at least 2 hours to set.
  • Serve and Enjoy
